feat: update lance dependency to v2.0.0 (#2985)

## Summary
- Bump Lance Rust crates to v2.0.0 (from v2.0.0-rc.4) and update Java
`lance-core` to 2.0.0.
- Verified `cargo clippy --workspace --tests --all-features -- -D
warnings` and `cargo fmt --all`.
- Triggering tag: v2.0.0.
