Brendan Clement 799c66bac8 docs: build the Rust examples with ethnum 1.5.3 ...

ethnum 1.5.2, which jsonb brings in through lance-arrow, transmutes () into
TryFromIntError and no longer compiles on Rust 1.97.0, the toolchain this
repository pins, so none of the Rust examples built. 1.5.3 builds the error
from a failed conversion instead. Only that lockfile entry changes; lancedb
stays at 0.31.0.
