Set minimum Python to 3.10 to solve Python 3.14 compatibility
When installing package using Poetry on Python 3.14 we have compilation

This due to the fact we are not installing a recent greenlet version
(3.1.1) due to the Python restriction.
By upgrading the minium Python version to 3.10 (minimum version
supported by the PSF https://devguide.python.org/versions/) the greenlet
module is now 3.3.1, it's the last available release.
