l0ng-ai 591a50a9c1 docs: fix the landing page failing to parse on the hosted build ...

The hosted Mintlify build percent-decodes page content before parsing
it, so the pane id "%22" in the demo became a bare quote and the whole
page fell back to the parse-error placeholder. Local mint dev/validate
do not decode, so they never saw it. Spell the pane ids' % as \u0025.

Also drop the temporary diagnostic pages used to bisect this.
