Ruben Fiszel d0f80c7af2 fix: make deploy source optional, UI sends explicit header ...

Default source is now None (direct API call), always blocked by
DisableDirectDeployment. UI, CLI, and merge explicitly identify
themselves via X-Windmill-Deploy-Source header.
