chore: upgrade lance to stable 4.0.0 (#3207)

Browse Source 
Bumps all lance-* workspace dependencies from `4.0.0-rc.3` (git source)
to the stable `4.0.0` release on crates.io, removing the `git`/`tag`
overrides.

No code changes were required — compiles and passes clippy cleanly.
