Add Content-Type header in documentation example (#841)

* Add Content-Type header in documentation example

In the example showing how to build a message from a pure string, set
the Content-Type to text/plain explicitly.
This header constant also includes the phrase charset=utf-8 so that
non-ascii characters will be displayed correctly.
