bench_ingest: general overhaul & add parametrization over virtual_file_io_mode (#11667)
Changes: - clean up existing parametrization & criterion `BenchmarkId` - additional parametrization over `virtual_file_io_mode` - switch to `multi_thread` to be closer to production ([Slack thread](https://neondb.slack.com/archives/C033RQ5SPDH/p1745339543093159)) Refs - epic https://github.com/neondatabase/neon/issues/9868 - extracted from https://github.com/neondatabase/neon/pull/11558
