pageserver: add unit test for deleted_at in IndexPart (#4844)
## Problem Existing IndexPart unit tests only exercised the version 1 format (i.e. without deleted_at set). ## Summary of changes Add a test that sets version to 2, and sets a value for deleted_at. Closes https://github.com/neondatabase/neon/issues/4162
