fix: bump lance dependencies to v4.0.0-beta.12

Update workspace lance dependency version constraints from =3.0.0-rc.3 to =4.0.0-beta.12 so the sophon workspace patch can apply the local lance submodule. Previously the version mismatch caused cargo to use the git-tagged 3.x version alongside the 4.x submodule, causing type incompatibilities. Co-Authored-By: Claude Sonnet 4.6 <noreply@anthropic.com>

Will Jones	9bb394ea9c	fix: bump lance dependencies to v4.0.0-beta.12 Update workspace lance dependency version constraints from =3.0.0-rc.3 to =4.0.0-beta.12 so the sophon workspace patch can apply the local lance submodule. Previously the version mismatch caused cargo to use the git-tagged 3.x version alongside the 4.x submodule, causing type incompatibilities.
